3. add ginger-garlic paste and sauté for a minute in the same pot. Add the chicken or vegetables and cook until they are lightly browned.

4. Add the yoghurt, turmeric powder, salt, and 1 tablespoon of spice blend. Mix well to coat the chicken or vegetables.

5. Add the soaked and drained rice to the pot, followed by the water. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is cooked and the flavours have melded.

6. Remove the pot from the heat and let it sit, covered, for an additional 10 minutes. Fluff the rice gently with a spoon.

7. Serve the Indian wedding biryani hot, garnished with reserved caramelised onions and fresh cilantro leaves.

  1. Do not add too much water; the best way to know the amount of water to be added is to remember the Rice quantity. The water will always be twice the quantity of rice, i.e. if you add two cups of rice, it will be two cups of water.
  1. Don’t overcook; if you leave Biriyani on the stove for more than 30 min, then you are going to burn the rice at the bottom; the timings may vary depending on the quantity of the Biriyani but make sure your rice is not overcooked at the bottom.
